Louisiana Cajun Seafood Casserole

In this video of the Full Life Crew. I share my daily routine. Being a Mom of 8 kids it is very busy. The laundry is never ending. The dishes are always dirty. The events are constant. It is defiantly a full life. Around the 6 min mark I cook Louisiana Cajun Seafood Casserole. It is easy to make and does not take a tremendous effort and very little prep. Hope you enjoy.

My family is not happy with me at all. This past Thanksgiving we cooked a huge meal. Even though President Biden said it would only cost $1 dollar more than the previous year, It cost double. But the real reason my family is so angry with me is because of this recipe.

The other day I went digging for something different to bring to dinner. I searched all the books and online for about 30 mins. Then I remembered my little black box of secret recipes. In this box are recipes that are 100’s of years old.

They are passed down through the generations of French, Spanish, and now Louisiana mothers. In this box are recipes still in the handwriting of master mother chefs from the turn of the century.

Some of these recipes were born in the depression. Some of these came over from Europe into Nova Scotia. Only to then be sent to Louisiana with the persecution of the Acadian people. When I do go to the black box it is not with a casual approach.

Anytime I approach this box, it is with a sense of reverence of what each and everyone of these women before accomplished. I would not be her today if not for these grand women that carried their traditions forward.

After cooking this Seafood Casserole my family in a fun yet aggressive tone, demanded an answer for why this has not been presented to them more. I explain, I just don’t know. But by the response of my family I will bring it out more often.

I literally forgot I had this recipe in my secret black box of recipes. Seafood Casserole has always been a holiday favorite. I am not sure why my seafood Casserole has never made it into the regular rotation of weekly meals. It could be because of the unhealthy nature of this meal.

WARNING!!!!! This meal will not help you lose weight. This seafood casserole will not help you flatten that tummy. It will not bring down your cholesterol. If anything this seafood casserole will have an adverse effect in these areas of your health and wellness journey.

I would equate this recipe to eating ice cream. Ice cream should be eaten occasionally and in limited quantities. This Casserole should be treated the same. The problem is the seafood and the creaminess of the dish. Once you start eating it you just don’t want to stop.

Seafood Casserole

½ cup margarine

1 ½ cup chopped onion

1 can cream of mushroom soup

1 can Fiesta nacho cheese soup

2 lbs seasoned shrimp or crawfish

5 cups cooked white rice

Sauté the onions in the margarine until soft. Add both soups to the onions and mix well. Next add and sauté for 20 minutes the shrimp or crawfish. Once done add the 5 cups of cooked rice. Pour into a casserole dish and bake at 350 degrees for 30 minutes.

This recipe may be doubled.
